1 rotisserie chicken, skin removed, meat shredded or cut into bite-sized pieces

1 can (540ml) white beans, drained

1 jar (430ml) tomatillo or green salsa

Avocado and cilantro for garnish

Salt and pepper (to taste)


  1. In a large pot, combine shredded chicken, white beans, and salsa.
  2. Add enough water just to cover ingredients.
  3. Bring mixture to a simmer and cook, about 10-15 minutes.
  4. Season with salt and pepper as needed, or add more salsa for extra flavor.
  5. Serve hot, garnished with slices of avocado and fresh cilantro leaves.
