Waldorf Salad

INGREDIENTS

1 apple, diced
2 stalks of celery, diced
1 cup grapes, sliced in half
1 cup walnut halves
2 tbsp mayonnaise
3 tbsp plain yogurt
1 tsp apple cider vinegar
¼ cup chopped parsley
¼ tsp salt
¼ tsp pepper
4 cups of torn Romaine lettuce.

Optional: ½ cup crumbled blue cheese

INSTRUCTIONS

  1. Add the apple, celery, grapes and walnuts to a mixing bowl.  Stir in the mayonnaise, yogurt, vinegar, parsley, salt and pepper until everything is well coated with dressing.
  2. Place Romaine lettuce on a serving tray and top with the Waldorf mixture. Garnish with blue cheese if using.
