Triple Threat Gnocchi w/ Sausage, Spinach and Sundried Tomatoes

300g hot Italian sausage (casings removed)

142g (5oz) spinach

1 tablespoon oil (from a jar of sundried tomatoes packed in oil)

454g fresh gnocchi

3 tablespoons sliced sundried tomatoes

Parmesan (for serving)


  1. In a large skillet over medium heat, cook sausage, breaking it up with a spatula, until brown and cooked through. 
  2. Add 1/2 cup of water to pan and scrape any brown bits off bottom.
  3. Add spinach and cook until wilted. Transfer sausage and spinach to a bowl, and clean out pan.
  4. In the same skillet over medium heat, add sundried tomato oil.
  5. Add gnocchi and cook for 4-6 minutes until beginning to brown.
  6. Return sausage and spinach to skillet, along with 1/2 cup of water. Cook, stirring occasionally until gnocchi is cooked through, about 5 minutes.
  7. Stir in sundried tomatoes and top with Parmesan before serving.
