Strawberry Cobbler

Jun 10, 2026

There is a moment every June when I have more strawberries than I have a plan for, and that is exactly when this strawberry cobbler gets made. It’s the dessert I reach for when I want something warm, golden, and bubbling away with fruit, but I do not have the energy for anything that involves rolling out pastry or babysitting a custard. You melt some butter, stir together a one-bowl batter, pile the strawberries on top, and let the oven do the rest. Twenty minutes of effort, a house that smells incredible, and a pan of cobbler that disappears the second the ice cream hits it.

This is the kind of recipe I love most: humble, forgiving, and genuinely better than the sum of its parts. The batter rises up and around the fruit as it bakes, so you get these gorgeous pockets of jammy strawberries set into a tender, buttery cake. No fancy technique, no special equipment, just a pie plate and a bowl. If you’ve got a pint of strawberries going soft on the counter, this is your answer.

Why You’ll Love This Strawberry Cobbler

It’s a one-bowl batter. The cobbler itself comes together in a single bowl with a spoon, no mixer, no creaming butter, no fuss. If you can stir, you can make this.

It rescues soft berries. Strawberries that are a little too ripe to eat out of hand are absolutely perfect here. The riper they are, the more they break down into sweet, jammy pockets as they bake.

The butter does something magic. Melting the butter right in the pie plate before the batter goes in gives you those crisp, golden, almost caramelized edges that make a cobbler so good. It’s a tiny step with a big payoff.

It’s endlessly adaptable. Strawberries today, but this same formula works beautifully with whatever fruit you’ve got: peaches, blueberries, a mix of summer berries. Once you’ve made it once, you’ll make it all season.

It feeds a crowd with almost no effort. Warm cobbler and a scoop of vanilla ice cream is the kind of dessert that makes people think you fussed. You didn’t. That’s our little secret.

Ingredients

For the Strawberries

  • 454g/1lb strawberries, hulled and halved
  • 1 tablespoon sugar

For the Cobbler

  • 4 tablespoons butter
  • 1 cup + 2 tablespoons flour
  • 1 ¼ teaspoons baking powder
  • ½ cup sugar
  • Pinch of salt
  • ⅔ cup milk
  • 1 teaspoon vanilla (see note below)

A quick note from Alicia: Vanilla is stirred into the batter in Step 3 of Andrea’s instructions but wasn’t listed in the original ingredients, so I’ve added “1 teaspoon vanilla” to the ingredient list so it matches. If that amount isn’t right, just let me know and I’ll adjust.

Tips for the Best Results

Use the Ripest Strawberries You’ve Got

This is a recipe that rewards ripe fruit. Deeply red, fragrant, slightly soft berries will break down into the most flavourful, jammy pockets. Save the firm, picture-perfect ones for snacking and send the squishy ones into the cobbler.

Melt the Butter Right in the Pan

Don’t skip melting the butter in the pie plate itself. As the batter bakes, it floats up through the butter, and that’s what gives you those crisp, golden, slightly caramelized edges. Keep an eye on it in the oven so it melts but doesn’t brown.

Don’t Overmix the Batter

Stir the batter just until the flour disappears. A few small lumps are completely fine. Overmixing develops the gluten and gives you a tougher, denser cobbler instead of a tender one.

Don’t Stir the Fruit In

Resist the urge to mix the strawberries into the batter. Pouring the batter in first and topping it with the fruit is what gives a cobbler its signature look: cake rising up around islands of bubbling fruit.

Let It Rest Before Serving

I know it’s hard, but give it those 10 minutes of cooling time. Straight out of the oven the cobbler is molten and loose; a short rest lets it set up so it holds together on the spoon instead of sliding everywhere.

How to Make Strawberry Cobbler

Step 1: Macerate the strawberries. Preheat your oven to 350°F. In a bowl, mix together the halved strawberries and 1 tablespoon of sugar. Set aside, since the sugar will pull out some of the juices while you make the batter.

Step 2: Melt the butter in the pan. Add the butter to a 9-inch round pie plate and place it in the oven just until the butter melts. Keep an eye on it so it doesn’t brown.

Step 3: Make the batter. Meanwhile, in a separate bowl, mix together the flour, baking powder, sugar, and salt. Pour in the milk and vanilla and stir until just combined.

Step 4: Assemble. Remove the pie plate from the oven. Pour the cobbler batter into the melted butter, but don’t stir. Spoon the strawberries and their juices evenly over the top.

Step 5: Bake. Bake for 45–55 minutes, until the top is golden brown and set.

Step 6: Cool and serve. Remove from the oven and let cool slightly, about 10 minutes, before serving, ideally with a scoop of vanilla ice cream melting over the top.

Frequently Asked Questions

Can I use frozen strawberries for this strawberry cobbler? Yes. Thaw them first and drain off the excess liquid, otherwise the extra moisture can make the cobbler soggy and extend the bake time. Fresh, in-season strawberries will always give you the best flavour and texture, but frozen will absolutely work in a pinch.

What size pan do I need? A 9-inch round pie plate is what this recipe is written for. A similar-sized baking dish (around 1 to 1.5 quarts) will also work, just watch the bake time, since a deeper or shallower dish can change how long it takes to set.

How do I know when the strawberry cobbler is done? The top should be golden brown and set, not wet or wobbly in the centre. If you press gently on the top it should spring back. This usually takes 45 to 55 minutes, but ovens vary, so start checking around the 45-minute mark.

Can I make this strawberry cobbler ahead of time? Cobbler is best the day it’s made, while the edges are still crisp. You can bake it a few hours ahead and serve at room temperature, or gently rewarm it in a 300°F oven before serving. The batter doesn’t hold well unbaked, so mix and bake it in one go.

How do I store leftovers? Cover and refrigerate any leftovers for up to 3 days. The topping will soften as it sits, but it’s still delicious. Rewarm individual portions in the microwave or a low oven to bring back some of that just-baked quality.

Can I swap in a different fruit? Absolutely. This is a wonderfully flexible base recipe. Blueberries, raspberries, sliced peaches, or a mix of summer berries all work beautifully. Just keep the total fruit amount about the same (roughly a pound) and adjust the sugar to taste depending on how sweet your fruit is.

Do I have to serve it with ice cream? Not at all, but warm cobbler and cold vanilla ice cream is a genuinely perfect pairing. Whipped cream, a splash of cold cream, or a dollop of Greek yogurt are all excellent too. Or eat it straight from the pan with a spoon. No judgment here.
