Spicy Shrimp and Pineapple

1 cup diced pineapple

½ cup thinly sliced, red onion

½ jalapeno, thinly sliced

¼ cup chopped cilantro

3 tablespoons lime juice

3 tablespoons olive oil

454g (1lb) large, cooked shrimp, cut in half

Salt and Pepper  


1. Add the pineapple, red onion, jalapeno, cilantro, lime juice and olive oil to a bowl and stir to combine.  Season with salt and pepper. Cover and refrigerate until ready to serve.

2. Just before serving, mix in the cooked shrimp.
