Some mornings go according to plan. Most of mine involve a missing shoe, a permission form nobody mentioned until 8:05, and the sudden realization that I haven’t eaten a single thing. That’s why I call these SOS Sheet Pan Breakfast Burritos. They’re my freezer lifesaver, the emergency breakfast I can grab, reheat and eat with one hand while hunting for the car keys with the other.

Everything happens on one sheet pan: potatoes, peppers and onion roast first, then a dozen eggs get poured right over the top to bake. Scramble in some melty havarti, roll it all up in tortillas, and you’ve got 10 hearty breakfasts waiting in the freezer. They’re part of my Hunger Gap collection, the recipes designed to fill that empty stretch when you’re sprinting out the door and the next real meal is hours away. And because every burrito deserves a sauce, there’s a quick, creamy Sriracha Mayo for dunking.

Why You’ll Love These Sheet Pan Breakfast Burritos

  • One pan, ten breakfasts. No standing over a skillet scrambling eggs in batches. The oven does the heavy lifting while you pack lunches.
  • A true freezer lifesaver. Wrapped in foil and bagged, they’re ready whenever an emergency (or just a regular Tuesday) strikes.
  • They actually keep you full. Eggs, potatoes and cheese bring the protein and staying power, so you’re not raiding the snack drawer by 10 a.m.
  • That Sriracha Mayo. Creamy, tangy and a little spicy, and it takes about 30 seconds to whisk together.
  • Reheat your way. Microwave, oven or crisped up golden in a skillet, depending on how much time the morning is giving you.

Ingredients

Makes 10 burritos.

For the Burritos

  • 2 yellow potatoes (about 350g), small dice
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 onion, thinly diced
  • 1 tablespoon vegetable oil
  • 1 tablespoon chili powder
  • 12 eggs
  • 1 ½ cups grated havarti cheese
  • 10 8-inch tortillas

For the Sriracha Mayo

  • ½ cup plain Greek yogurt
  • ½ cup sour cream
  • 2 tablespoons sriracha
  • ¼ teaspoon salt

Tips for the Best Sheet Pan Breakfast Burritos

  • Use a rimmed sheet pan. A dozen eggs is a lot of liquid, so make sure your pan has sides to keep everything where it belongs. Lining it with parchment makes cleanup a breeze.
  • Keep the potato dice small. Small, even pieces roast through in 18-20 minutes. Big chunks will still be crunchy when the eggs go in.
  • Let the filling cool a little. Give the scrambled eggs a few minutes to cool before rolling. Piping hot filling steams the tortillas and makes them soggy in the freezer.
  • Warm your tortillas. Cold tortillas crack when you roll them. A few seconds in the microwave makes them soft and cooperative.
  • Label the freezer bag. Write the date on the bag. Future you, standing bleary-eyed in front of the freezer, will be grateful.

How to Make SOS Sheet Pan Breakfast Burritos

For the Burritos

  1. Preheat the oven to 400°F.
  2. Add the potatoes, peppers, onion, oil, and chili powder to a sheet pan and roast for 18-20 minutes until the potatoes are cooked through.
  3. In the meantime, whisk the eggs together and season with salt and pepper.
  4. Remove the veggies from the oven and reduce the temperature to 350°F.
  5. Pour the eggs onto the roasted vegetables and return the pan to the oven. Cook for about 15 minutes, until the eggs are set.
  6. Remove from the oven. Scatter the cheese over the top. Use a spatula to scramble the eggs.
  7. Fill and roll each tortilla, wrap in aluminum foil, place in a freezer bag, and freeze until ready to eat.

To reheat: Remove foil and microwave for 1-2 minutes or bake in the oven at 350°F until heated through.

Or crisp them up in a skillet: Add a little oil to a nonstick or cast iron skillet, placed over medium heat. Add the burrito and fry on both sides until golden brown and heated through. Or heat in a microwave.

Frequently Asked Questions

How long do breakfast burritos last in the freezer? Wrapped in foil and sealed in a freezer bag, they keep well in the freezer. For the best flavour and texture, enjoy them within about 3 months.

How do you reheat frozen breakfast burritos? Remove the foil first (never put foil in the microwave), then microwave for 1-2 minutes or bake in the oven at 350°F until heated through. For a crispy, golden outside, fry the burrito in a little oil in a nonstick or cast iron skillet over medium heat, turning to brown both sides.

Do I need to thaw breakfast burritos before reheating? You don’t have to, but thawing them overnight in the fridge gives you the quickest, most even reheat. If you’re going straight from frozen, give them a little extra time and make sure they’re hot all the way through the centre.

What is sriracha mayo made of? This version is a creamy blend of Greek yogurt, sour cream, sriracha and a pinch of salt. It has all the creamy, spicy tang you want from a sriracha mayo and comes together in one bowl with a whisk.

Can I use a different cheese in sheet pan breakfast burritos? Yes. Havarti melts beautifully into the eggs, but cheddar, Monterey Jack or pepper Jack are all great swaps. Use whatever your crew likes best.

Can I add meat to breakfast burritos? Sure. Cooked, crumbled breakfast sausage or bacon is a great addition. Scatter it over the eggs along with the cheese before you scramble.

How long does sriracha mayo keep? Serve it right away or store it in the refrigerator for up to 3 days. It also freezes for up to 3 months, so you can make a batch to go with your freezer burritos.
