Smokey Southwest Pasta Salad with Smoked Tofu

For the dressing

¾ cup sour cream

½ cup mayonnaise

4 tablespoons lime juice

¾ teaspoon onion powder

¾ teaspoon smoked paprika

¾ teaspoon chili powder

½ teaspoon salt

½ teaspoon pepper

For the Pasta Salad

3 ½ cups penne pasta

2 cups packed, thinly sliced dinosaur (tuscan) kale

2 tomatoes, diced

1 ¼ cup corn niblets

½ cup small diced red onions

180g block smoked tofu, grated


1. For the dressing add the sour cream, mayonnaise, lime juice, onion powder, smoked paprika, chili powder, salt and pepper to a large mixing bowl and stir to combine. 

2. Meanwhile, cook the pasta in a large pot of salted, boiling water until cooked through. Drain the pasta in a colander. Rinse it with cold water to cool it down. Shake the pasta in the colander to remove excess water. 

3. Transfer the pasta to the bowl with the dressing. Add the kale, tomatoes, corn, red onions and grated tofu. Toss well until everything is coated in the creamy dressing. 

Serve immediately. Or cover and store in the fridge until ready to serve, up to 3 days.

      Depends where you live. I buy it at my local grocery store (no frills, Loblaw, Farm Boy etc)
