Roasted Red Pepper and Feta Turkey Burgers

I love a good burger and when I want something a little different I reach for this recipe.  Turkey is lean and delicious and really is super versatile.  It’s so easy to mix any number of flavourings into it to transform it into something new and delicious.  This one was brought to life by looking through my fridge and seeing that I had half a bottle of roasted red peppers and a little feta cheese that needed using up.  A great flavour combination that I could eat over and over again.

Another interesting addition is the use of quick cooking oats.  These little packets were sitting at the back of my pantry and I know no one will touch them until next winter, so I decided to use them instead of bread crumbs. Top these burgers with any number of things but I love the addition of grilled sweet onions and my easy pesto mayo.  You can use store bought pesto or one you make from scratch.

Ingredients

For the burgers

900g (2 lbs) ground turkey½ cup diced roasted red peppers

½ cup crumbled feta cheese

⅓ cup instant oats (3 small packs -28g each)

1 teaspoon dried oregano leaves

1 teaspoon garlic powder

¼ teaspoon salt

8 hamburger buns

For the Pesto Mayo

½ cup mayonnaise

3 tablespoons pesto

Instructions

1. Add the ground turkey, roasted red peppers, feta cheese, instant oats, oregano, garlic powder and salt to a bowl.  Mix everything together until it’s well combined. 

2. Form the turkey mixture into 8 equal patties. Place them on a plate or baking sheet and cover.  Store in the fridge for a minimum of 30 minutes up to 24 hours,  until ready to grill.

3. Preheat the barbecue to medium high and add the turkey burgers.  Cook for 5-6 minutes with the lid down, until the burgers release easily from the grill and are easy to flip.  Continue to grill on the second side for another 5-6 minutes until the burgers have nice grill lines on the second side.  Flip one more time and grill until cooked through.

4. Toast the hamburger buns.

5. In the meantime, mix together the mayonnaise and pesto.

Serve topped with the pesto mayo and any other of your favourite condiments.
