Roasted Pepper Bruschetta: A Delicious and Effortless Appetizer

454g mini sweet peppers, stems removed

1 clove garlic, cut in half

2 tablespoons balsamic vinegar

3 tablespoons olive oil

3 sprigs of thyme

½ cup crumbled feta cheese

Crostini or crackers for serving


1. Add the sweet peppers and garlic to a baking sheet.  Drizzle with the balsamic vinegar and olive oil. Add the sprigs of thyme.

2. Roast in the oven for 18-22 minutes until the peppers are golden brown and soft. Remove from the oven. 

3. Place one pepper on a crostini or cracker and top with feta cheese.
