Lunch is a distant memory, dinner is hours away, and suddenly eating shredded cheese straight out of the bag over the sink feels like a perfectly reasonable plan. (No judgment. I was there yesterday.) These Pizza Buns are my answer to that moment. They are part of The Hunger Gap, my collection of snacks for the frantic in-between times: the sprint out the door, the after-school stampede, the mid-afternoon slump when you need something real to carry you through to the next proper meal.
The magic is in the dough. It is just flour, a few pantry seasonings and Greek yogurt. No yeast, no rising, no staring at a bowl willing it to double. The yogurt makes the dough tender with a little tang, and it gives these buns a boost of protein, so they have a lot more staying power than a sad handful of crackers. Top them with sauce, cheddar and pepperoni, bake for about 16 minutes, and you have eight little pizza moments ready for lunchboxes, road trips or your own personal snack emergency.
Why You’ll Love These Pizza Buns
- No yeast, no waiting. The Greek yogurt dough comes together in one bowl and goes straight into the oven. You can go from craving to eating in about half an hour.
- A snack that actually holds you. Greek yogurt in the dough brings more protein to the party, so one or two of these keep you full a whole lot longer than a granola bar eaten in the car.
- Everybody at the table is on board. They taste like pizza because, well, they basically are pizza. Nobody needs convincing, including the picky eaters.
- Totally customizable. Swap the pepperoni for ham, olives, peppers or whatever is hanging out in the fridge drawer. The dough is a blank canvas.
Ingredients
Makes 8.
- 1 ½ cups flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon dried oregano leaves
- ¼ teaspoon garlic powder
- 1 cup plain Greek yogurt
- ⅔ cup grated cheddar cheese
- ¼ cup pizza sauce
- 8-10 slices of Pepperoni, cut into quarters
Tips for the Best Pizza Buns
- Use thick Greek yogurt. Plain Greek yogurt is thick enough to turn the flour into a workable dough. Regular, runnier yogurt will leave you with a sticky mess, so stick with the Greek stuff.
- Don’t skip the 3-minute rest. The dough looks shaggy and hopeless at first. That short pause lets the flour soak up the moisture from the yogurt, and suddenly it all comes together.
- Knead just a few times. Five to eight turns is all it needs. Overworking the dough makes the buns tough instead of soft and tender.
- Make a real divot. Pressing a little well into the centre of each round gives the sauce and cheese a place to sit, so they don’t slide off and weld themselves to the pan.
- Layer in order. Sauce, then cheese, then pepperoni. With the pepperoni on top, it gets those crispy, curled-up edges everyone fights over.
- Flour your hands. If the dough sticks while you shape it, a light dusting of flour on your palms makes the job much easier.
How to Make Pizza Buns
- Preheat the oven to 375°F.
- In a bowl, mix flour, baking powder, salt, dried oregano, and garlic powder.
- Add the Greek yogurt and stir through. It will be a ragged dough at first. Let it sit for 3 minutes to absorb moisture, then press any dry bits into the dough and knead 5-8 times until it comes together in a ball of dough.
- Divide into 8 pieces and press into 2-3″ rounds, leaving a small divot in the centre.
- Top with sauce, cheese, and pepperoni in that order.
- Place on a parchment-lined sheet and bake for 16-18 minutes.
Storage and serving: Let the buns cool for a few minutes before diving in (molten pizza sauce is no joke). Leftovers keep in an airtight container in the fridge for up to 3 days. Reheat them in a toaster oven or air fryer to crisp the bottoms back up, or eat them cold straight from the fridge, which is honestly its own kind of delicious.

Frequently Asked Questions
Can you make pizza buns without yeast? Yes, and that is the whole beauty of this recipe. The dough is made with flour, baking powder and Greek yogurt, so there is no yeast, no proofing and no waiting. The baking powder gives the buns their lift while they bake.
What kind of yogurt is best for yogurt dough? Plain Greek yogurt is the way to go. It is thick enough to bring the dough together without making it sticky. Skip flavoured or vanilla yogurt (unless you are into vanilla pepperoni, which I am not).
Can I use a different cheese? Absolutely. Cheddar gives a nice sharp flavour, but mozzarella, a pizza cheese blend, or a mix of whatever you have in the fridge will all work beautifully.
How do I know when the buns are done? After 16-18 minutes, the cheese should be melted and bubbly and the bottoms lightly golden. Ovens vary, so start checking at the 16-minute mark.
Can I freeze these? Yes. Let them cool completely, then freeze in a freezer bag or airtight container. Reheat them in the oven or toaster oven until warmed through for an almost instant snack.
How can I make them vegetarian? Skip the pepperoni and top them with chopped peppers, mushrooms, olives or sliced cherry tomatoes instead. Just keep the toppings small so they cook through in time.
