Pickle de Gallo

Feb 2, 2025

This Pickle de Gallo is a tangy, briny twist on the classic Pico de Gallo—but instead of tomatoes, we’re all about pickles! Combining full sour pickles, spicy pickles, and crunchy red peppers, this condiment is bursting with salty, sour, and slightly sweet flavors. Perfect for pickle lovers, it’s a great dip, topping, or snack to enjoy with chips, crackers, or sandwiches.

Ingredients

  • 1 cup finely chopped full sour pickles
  • 1 cup finely chopped spicy pickles
  • ½ cup finely chopped red bell pepper
  • 3 green onions, thinly sliced
  • 2 tablespoons pickle brine
  • 1 tablespoon olive oil

How to Make Pickle de Gallo

  1. Chop & Mix:
    • Finely chop both types of pickles and the red bell pepper.
    • Thinly slice the green onions.
  2. Combine Ingredients:
    • Add all ingredients to a bowl: pickles, red pepper, green onions, pickle brine, and olive oil.
    • Stir well to combine.
  3. Chill & Serve:
    • Serve immediately or cover and refrigerate for up to 24 hours for the flavors to meld.
  4. Enjoy With:
    • Sturdy chips or crackers
    • Burgers & hot dogs
    • Grilled cheese sandwiches
    • Tacos or nachos

Tips & Variations

  • Mix up the pickles! Use a combination of dill, sweet, spicy, or garlic pickles for contrast.
  • Boost the heat: Add chopped jalapeños or a dash of hot sauce for extra spice.
  • Make it creamy: Stir in a spoonful of sour cream or Greek yogurt for a tangy dip.
  • Extra crunch: Toss in some diced cucumber for added texture.

FAQ

Can I make this ahead of time?
Yes! It actually tastes better after a few hours in the fridge as the flavors meld.

What kind of pickles should I use?
Use a mix of your favorites! Full sour pickles bring the tang, spicy pickles add heat, and sweet pickles balance the saltiness.

Can I use pickle relish instead?
Relish has a finer texture and tends to be sweeter, so it won’t give the same chunky, fresh feel as this recipe.
