LOVE YOUR LEFTOVERS: Beef and barley stew

Leftover roast beef has so many delicious uses and this is only one of them.  I always buy a little more than I will need for dinner and plan to extend leftovers in recipes like this hearty soup.  A little leftover beef goes a long way and delivers on flavour and satisfaction.

INGREDIENTS

2 tbsp canola oil
1 cooking onion, diced
1 leek (white part) thinly sliced
2 carrots, diced
2 celery sticks, diced
2 cups diced, leftover beef
5 cup water
2 sprigs fresh thyme
1 tbsp Worcestershire sauce (optional)
½ tsp salt
½ tsp ground pepper
1/2 cup pot barley
 

 

COOKING INSTRUCTIONS

 

  1. Heat the canola oil in a large pot and cook the onions, carrots and celery until soft.
  2. Add the leftover beef, water, thyme, Worcestershire, salt and pepper.  Bring to a simmer, cook uncovered for 10min.
  3. Stir the barley and cook, covered for 20min until the barley is cooked.
  4. Taste for seasoning and add salt and pepper as desired.
