How to make Greek-style loaded fries
- Preheat the oven according to the directions on your frozen fry package.
- Spread the fries in a single layer on a baking sheet. Use two sheets if needed to avoid crowding. Bake as directed, adding an extra 5 minutes if you prefer them extra crispy.
- While the fries bake, season the sliced chicken with salt and pepper.
- Heat the oil in a skillet over medium heat. Add the chicken and cook for 6 minutes, stirring occasionally, until nearly cooked through.
- Pour in ⅓ cup of the Greek salad dressing and continue to cook for 3–4 minutes until the chicken is fully cooked and the dressing is absorbed.
- Remove the fries from the oven and transfer to a large serving platter or individual plates.
- Drizzle with some of the remaining Greek dressing, then top with the cooked chicken, dollops of tzatziki, crumbled feta, and any additional toppings you like.

FAQ
Can I use air fryer fries?
Yes. Just cook them according to your air fryer’s instructions and proceed with the toppings as directed.
What if I don’t eat chicken?
Try using grilled halloumi, chickpeas tossed in dressing, or plant-based chicken alternatives.
Can I make this ahead of time?
The chicken can be cooked ahead and reheated, but the fries are best baked and assembled just before serving to stay crispy.
What’s the best kind of tzatziki?
Look for one that’s thick and garlicky, or make your own with Greek yogurt, cucumber, garlic, lemon juice, and dill.

Instructions
Preheat the oven to the temperature indicated on the frozen french fry package
1. Pour the bag of french fries out onto a baking sheet into one single layer. Use two baking sheets if yours isn’t’ large enough. Bake according to package directions. Although I always find that depending on the brand, cooking the fries at least 5 more minutes than the directions indicate will make them extra crispy which I love.
2. Slice the chicken into thin strips. Season with salt and pepper;
3. Place a skillet over medium heat. Add 1 tablespoon vegetable oil. Once the oil is warm add the chicken. Cook, stirring occasionally for 6 minutes until the chicken is almost cooked through. Pour in ⅓ cup of the Greek salad dressing and cook for another 3-4 minutes until the chicken has absorbed all the flavor of the dressing and is cooked through.
4. Remove the fries from the oven. This can be served either ‘nacho style” or on individual plates. Portion the fries out onto each plate, drizzle with a little of the remaining marinade/dressing, top with chicken, dollop with tzatziki and sprinkle over the feta cheese along with any other optional toppings you like.
