1 large head of kale, washed and stems removed

1/2 cup peanut butter

1 shallot, minced

Juice of 2 limes

1 tbsp grated ginger

1 tbsp hot sauce

2-3 tbsp warm water

1/2 cup roasted peanuts, chopped

  1. Tear the kale into bite-sized pieces.

  2. In a large salad bowl, whisk together the peanut butter, shallot, lime juice, ginger and hot sauce. Add in the warm water one tbsp at a time until dressing is creamy and smooth.

  3. Add in kale and toss well to coat all the leaves. 

  4. Top with roasted peanuts just before serving.
