Mushroom risotto makes a unique savoury gift from the kitchen and it takes no time to assemble.  It requires zero cooking in advance which makes it the perfect last minute gift idea.  Attaching a simple “how to cook” label makes this an easy to make, weeknight treat for the receiver of this delicious gift.

Ingredients 

1 ¼ cup Arborio rice

1/2 cup dried mixed mushrooms

¼ cup chopped dry sun-dried tomatoes

3 tsp powdered beef stock

½ tsp dry thyme leaves

You will also need

1 500ml mason jar

To assemble gift:

  • Pour the rice into the jar and top with the mushrooms, sun-dried tomatoes, beef stock and thyme leaves.

  • Seal with lid and then add gift label.

Cooking instructions to put on gift label:

You will need:

1 shallot minced, 1 tbsp olive oil, 2 tbsp butter, divided, 4 cups warm water, 1/4 cup of parmesan cheese,

Cooking instructions

  1. Bring 5 cups of water to a boil.

  2. Place a medium skillet over medium heat and add olive oil and shallot, cook for 2min or until shallot is soft and translucent.

  3. Pour in the entire jar of risotto mix and stir to coat the rice in oil.  Immediately add 2 cups of water, or enough so that it comes about ½” above the rice.   Bring the mixture to a simmer.  Cook the mixture, stirring occasionally until the water has to the level of the rice and add more water, stirring occasionally.  Continue in this manner for about 18min until the rice is cooked al dente.

  4. Stir in the butter and parmesan cheese and season with pepper.

  5. Serve
