Makes 1 250ml jars

200g marinated bocconcini balls (16 pieces)

2 1/2″ wide strips lemon zest

2 small springs of thyme

1 tsp white wine vinegar

pinch chili flakes

1/4 cup olive oil

1/4 cup canola oil

Tip: depending on how big your jars are you may need more or less oil to cover your cheese.  Be sure your cheese is fully submerged.
