Fully Loaded Dill Pickle French Fries

Jul 19, 2026

If you are a card-carrying member of the dill pickle fan club, these Fully Loaded Dill Pickle French Fries are about to become your new obsession. We are talking hot, crispy fries tossed in briny dill, then piled high with a cool, creamy dill pickle sauce, tangy grated pickles, and a scatter of fresh green onions. It hits every note at once: salty, tangy, crunchy, creamy. Best of all, it leans on frozen fries and a handful of pantry staples, so you can go from craving to plate without much fuss at all. Consider this your official permission to eat fully loaded fries as a meal.

Why You’ll Love These Dill Pickle Fries

  • All the pickle, none of the fuss. Frozen fries do the heavy lifting, so the only real work is stirring together a quick sauce and grating some pickles. Minimal effort, maximum payoff.
  • That perfect tangy-creamy combo. The cool, herby sour cream sauce against the hot, salty fries is the kind of contrast that makes you go back for one more bite (then five more).
  • A crowd-pleaser and a snack-for-one. These work beautifully as a shareable appetizer for game night or a slightly unhinged solo dinner. No judgment here.
  • Make the sauce ahead. The dill pickle sauce actually gets better as it sits, so you can have it ready and waiting in the fridge before the fries even hit the oven.

Tips for the Best Dill Pickle Fries

Make the sauce ahead. The dill pickle sauce needs at least an hour in the fridge to let the flavours come together, and it holds beautifully for up to 24 hours. Stir it up before you do anything else and it will be ready when the fries are.

Drain those grated pickles. Grated pickles hold a surprising amount of brine, and soggy toppings are nobody’s friend. Press them gently in a fine mesh strainer and let them keep draining while everything else cooks. Bonus: you will collect that brine for the fries.

Do not waste the drained brine. The brine you press out of the grated pickles is liquid gold. Drizzling it over the hot fries is what packs in that punchy dill flavour from the inside out.

Cook the fries a little longer than the package says. Frozen fries almost always need a few extra minutes to reach true golden, shattering-crisp perfection. Give them an extra 3 to 5 minutes if they are not there yet. Crispy fries stand up much better to the sauce.

Spread them out. Crowded fries steam instead of crisp. Use one or two rimmed baking sheets so every fry has room to breathe and brown.

Toss while hot. Adding the brine, dill, and salt while the fries are straight-out-of-the-oven hot helps everything cling and soak in. Toss right away.

How to Make Fully Loaded Dill Pickle French Fries

Step 1: Make the dill pickle sauce. Mix together the sour cream, pickle brine, white wine vinegar, onion powder, garlic powder, salt and fresh dill. Cover and refrigerate for a minimum of 1 hour, up to 24 hours.

Step 2: Drain the grated pickles. Place the grated pickles in a fine mesh strainer set over a bowl. Press gently to push out any excess brine. Set aside and allow the grated pickles to continue to drain.

Step 3: Bake the fries. Preheat the oven to the temperature indicated on the frozen french fry package. Pour the french fries in one even layer on one or two rimmed baking sheets. Bake according to package directions. Check to ensure the fries are crispy and golden brown. That sometimes means cooking them for a couple minutes longer (3 to 5 minutes) than indicated on the package.

Step 4: Season the hot fries. Transfer the french fries to a large bowl. Drizzle about a heaping tablespoon of the pickle brine (from the pickles that are draining) over the hot fries. Add the dill and a couple pinches of salt. Toss the french fries.

Step 5: Load them up. Portion the french fries out onto plates. Drizzle over a generous amount of the dill pickle sauce. Top with a couple tablespoons of the grated pickles. Garnish with green onions.

Frequently Asked Questions

What are fully loaded dill pickle french fries? They are crispy baked french fries tossed in briny dill, then topped with a creamy dill pickle sour cream sauce, tangy grated pickles, and fresh green onions. Think loaded fries, but with a bright, punchy dill pickle twist instead of the usual cheese and bacon.

Can I make the dill pickle sauce ahead of time? Yes, and you should. The sauce needs a minimum of 1 hour in the fridge to develop its flavour and holds well for up to 24 hours. Making it ahead means the tangy, herby flavours have time to meld before serving.

What kind of pickles work best for this recipe? Garlic dills are the move here, as they bring that classic garlicky, briny punch. Grate them for the topping and use their brine to season the fries and the sauce. Any good quality dill pickle you love will work.

Can I use an air fryer instead of the oven? Absolutely. Cook the frozen fries in your air fryer according to the manufacturer’s directions until they are golden and crisp, then toss and load them exactly the same way. You may need to work in batches so they do not crowd.

Why do I need to drain the grated pickles? Grated pickles hold a lot of brine, and piling wet pickles on top would make your crispy fries soggy fast. Pressing and draining them keeps the texture right, and it gives you that flavourful brine to drizzle over the hot fries.

Can I make these gluten free? Yes. Most frozen french fries are naturally gluten free, but always check the package to be sure. The rest of the ingredients, including the sour cream sauce and pickles, are gluten free as well.

What should I serve with dill pickle fries? They are hearty enough to be a snacky meal on their own, but they also shine alongside burgers, grilled chicken, or sandwiches. Serve them as a shareable appetizer at your next game night and watch them disappear.

Can I use homemade or fresh-cut fries instead of frozen? Definitely. Frozen fries keep this recipe quick and easy, but homemade or fresh-cut fries work well too. Just bake or fry them until crispy and golden before tossing with the brine, dill, and salt.
