Day 4: French Onion-ish Chicken

by

This cozy, skillet-style chicken dish borrows all the best parts of French onion soup — caramelized onions, rich broth, melted Swiss cheese — and turns them into a satisfying, weeknight-friendly dinner. It’s savoury, cheesy, and full of deep flavour, all without the need for soup bowls or toasted croutons.

How to make French Onion Chicken in a skillet

  1. Place a large skillet over medium heat. Add 1 tablespoon of vegetable oil.
  2. Season the chicken breasts with dried thyme, salt, and pepper. Sear the chicken for 5–6 minutes per side until golden brown. Transfer to a plate (it’s fine if not fully cooked—it’ll finish in the sauce).
  3. Add the remaining tablespoon of oil and the butter to the skillet. Once melted, add the sliced onions. Cook for about 10 minutes, stirring occasionally.
  4. Stir in the balsamic vinegar and Worcestershire sauce. Continue cooking for another 5 minutes until the onions are soft and golden.
  5. Sprinkle in the flour and cook for 2 minutes, stirring constantly.
  6. Slowly stir in the chicken stock and bring the mixture to a simmer.
  7. Return the chicken and any juices back to the skillet. Simmer for 5–7 minutes until the chicken is fully cooked.
  8. Sprinkle the shredded Swiss cheese over the chicken. Cover with a lid and cook for 2–3 minutes until the cheese is melted.
  9. Serve hot with mashed potatoes, rice, or crusty bread.

Tips for success

  • Take your time with the onions—they’re the flavour base, and slow browning brings out their natural sweetness.
  • Use low-sodium chicken stock if your Worcestershire and cheese are salty.
  • Let the chicken rest in the sauce for a few minutes before serving to absorb more flavour.

FAQ

Can I use chicken thighs instead of breasts?
Yes, boneless skinless chicken thighs work just as well and stay extra juicy.

What kind of onions are best?
Yellow or Spanish onions are ideal—they caramelize well and have great flavour.

Can I make this ahead of time?
You can prep the onions and sauce earlier in the day, then reheat and finish the chicken and cheese just before serving.

What sides go well with this dish?
Mashed potatoes, creamy polenta, or buttered noodles are all great options for soaking up the sauce.

Ingredients

2 tablespoons vegetable oil, divided

4 boneless skinless chicken breast

1 teaspoon dried thyme leaves

2 tablespoons butter

4 onions, sliced

1 tablespoon balsamic vinegar

1 tablespoon Worcestershire sauce

2 tablespoons flour

2 1/2 cup chicken stock

1 1/2 cups shredded swiss cheese

Salt and Pepper

Instructions

  1. Place a skillet over medium heat. Add the oil. Season each piece of chicken with thyme, salt and pepper. Place the chicken in the skillet and fry for about 5 minutes on the first side. Flip and continue to cook for another 5-6 minutes. Transfer the chicken to a plate. It’s ok if it is not cooked all the way through, it will continue to cook in the sauce.

  2. Add the remaining tablespoon of oil and the butter to the same skillet. Once the butter has melted add the onions. Cook the onions for about 10 minutes, stirring occasionally. Stir in the balsamic vinegar and worcestershire sauce. Continue to cook for another 5 minutes until the onions are soft and golden brown.

  3. Sprinkle in the flour and cook for two more minutes. Stir in the chicken stock and bring to a simmer.

  4. Nestle the chicken back into the onions, along with any juices that have accumulated on the plate. Cook for another 5 minutes until the chicken has cooked through.

  5. Top with swiss cheese. Place a lid over the chicken and cook until the cheese has melted.

I made this last night (and had the leftovers for lunch today) and it was delicious and really very easy to make. My onions were huge so I only used 3 but there was plenty. Definitely will be a repeat for us!
