Seafood might not be the first thing that comes to mind when you think of burgers, but let me tell you, these shrimp burgers should be on your BBQ rotation. This recipe includes classic flavours like lemon, parsley and Old Bay seasoning, which highlight the natural flavours of the shrimp. Once prepared, they take under 15 min to cook and can be eaten topped with mayo, avocado or even seafood sauce. Although fresh shrimp is wonderful in this recipe, feel free to use frozen shrimp that has been thawed and well-dried.
Makes 4
1 lb raw shrimp
3 green onions, thinly sliced
1 tbsp parsley, finely chopped
1.5 tsp Old Bay seasoning
1 tsp dijon mustard
zest of 1/2 lemon
1 egg
1/3 cup panko breadcrumbs

Place half of the shrimp on a cutting board and chop into small pieces. Don’t leave any shrimp larger than 1/2 in. Most of it should be diced. Place chopped shrimp into a bowl. Place the other half of the shrimp on the cutting board and chop until everything is finely minced and add it to the bowl with the other shrimp.

Add all the remaining ingredients to the bowl and use a wooden spoon to mix everything together.

Divide the shrimp into 4 equal portions. Use your hands to form burgers with each portion. Take your time to ensure they are well-formed.

Place on a parchment-lined plate, cover with plastic wrap and place in the fridge for 30 min.

Heat BBQ to 375F and add the shrimp burgers. Cook on the first side for 5 min, or until the burger releases easily from the grill. Flip and continue to cook for another 7 min.

Toast buns and top with your favourite condiments and garnishes.
