Easy Sausage Rolls

Sep 18, 2024

Sausage rolls, also known as pigs in a blanket, are a timeless classic. With seasoned pork sausage wrapped in crispy, golden puff pastry, these sausage rolls are perfect for any occasion—or just because! While you can use pre-seasoned sausage, I prefer to make my own filling with ground pork and a few simple seasonings like onion, garlic, thyme, and my secret ingredient—ground allspice. The result? A homemade flavor that you can customize to your taste!

Puff pastry makes this dish super easy, but don’t forget to let it thaw before use. Keep it cold until you’re ready to fill and bake, and the result will be a beautifully flaky, golden crust. This recipe can be made into 8 large sausage rolls or 16 bite-sized appetizers—perfect for serving at parties or family dinners.

Ingredients you will need for these Easy Sausage Rolls

This recipe is simple, with ingredients you likely already have in your kitchen:

  • 350g ground pork
  • ⅓ cup minced onion
  • 1 clove garlic, minced or grated
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dried thyme
  • ¼ teaspoon ground allspice
  • 1 sheet of puff pastry (roughly 8×11 inches), thawed
  • 1 egg, lightly beaten
  • Flour for dusting
  • Sesame seeds (optional)

How to make these Easy Sausage Rolls

Follow these steps for delicious, crispy sausage rolls:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Filling: In a mixing bowl, combine the ground pork, minced onion, garlic, salt, pepper, thyme, and allspice. Mix everything together until well combined.
  3. Prepare the Puff Pastry: Remove the thawed puff pastry from the fridge and dust your work surface with flour. Lay the pastry on the dusted surface. If needed, roll the pastry out to an 8×11 inch rectangle. Cut the pastry lengthwise down the middle, creating two long strips.
  4. Assemble the Rolls: Take half of the sausage mixture and place it in a long line along the edge of one strip of pastry, about half an inch from the edge. Brush the edges of the pastry with the beaten egg. Fold the other side of the pastry over the sausage mixture, pressing the edges to seal. Brush the top of the roll with more egg wash and sprinkle with sesame seeds (optional). Repeat with the second strip of pastry and remaining sausage mixture.
  5. Cut the Rolls: Cut each sausage roll log into 8 large pieces or 16 smaller pieces, depending on your preference. Place the rolls on a parchment-lined baking sheet.
  6. Bake: Bake in the preheated oven for 18-20 minutes for larger rolls or 12-14 minutes for smaller rolls, or until the puff pastry is golden brown and the sausage filling is cooked through.
  7. Serve: Let the sausage rolls cool slightly before serving. They’re delicious with a side of mustard for dipping!

Tips and tricks to make the best Sausage Rolls

  • Keep the puff pastry cold: For the flakiest pastry, keep the puff pastry in the fridge until you’re ready to use it.
  • Customize the seasoning: Feel free to add your favorite seasonings to the pork mixture—cumin, smoked paprika, or even a pinch of chili flakes for heat.
  • Make ahead: These sausage rolls can be assembled ahead of time and frozen unbaked. Just bake them straight from the freezer, adding a few extra minutes to the cooking time.

FAQ

Can I use different types of meat?

Yes! While pork is traditional, you can easily substitute ground turkey, chicken, or beef for the filling.

Can I make these sausage rolls vegetarian?

Yes, simply replace the pork with a plant-based sausage alternative and follow the same steps for assembly and baking.

How do I store leftovers?

Store leftover sausage rolls in an airtight container in the fridge for up to 3 days. Reheat them in the oven to keep the pastry crispy.

Can I freeze sausage rolls?

Yes, these sausage rolls freeze well. Assemble them, freeze unbaked, and bake directly from frozen, adding a few extra minutes to the baking time.

Made these tonight and I absolutely love them!! Had to make my own “allspice” and threw in some leftover crumbled bacon (I know, who actually has leftover bacon!? Haha). I had more ground pork and the other sheet of puff pastry so I made smaller ones for some lunches etc. I enjoy following you on Instagram and have book marked you website.

In your Instagram post, the video shows you spreading something (maybe mustard?) on the puff pastry before adding the sausage, but I don’t see this ingredient in the recipe. Please clarify.

Yes, in the video, along with the message I sent with the link to this recipe… I indicate that you can spread mustard on the puff pastry ahead of adding the sausage as a variation. So a variation of this recipes – just add a swipe of Dijon or you’re favourite mustard to the puff pastry.
