Oatmeal is associated mostly with breakfast and often paired with fruit, yogurt and other sweet toppings.  However, instant steel cut oats lend themselves nicely as a vehicle for savoury fare and is equally delicious as a dinner item.  Enter our savoury three minute oat risotto!   You can make it simply by cooking the oats according to package directions and stirring in some butter, cheese, salt and pepper.  However, the flavour combinations are endless when you use  leftover bits and bobs like roasted veggies or meat.

Serves 1

1 package (75g) unflavoured quick cook steel cut oats

2 tbsp frozen peas

1 tbsp butter

2 tbsp grated Parmesan

1 tsp lemon juice

Salt and pepper to taste

Optional: garnish with more Parmesan and chopped parsley.

  1. Empty the package of oatmeal into a microwave safe bowl. Measure out the amount of water that the package directions call for. Add all but 2 tbsp of the water to the oats along with the frozen peas and half the butter.  Cook in the microwave for 2min.

  2. Remove bowl from microwave and stir in remaining butter, Parmesan and lemon juice.  If oats seem too thick you can stir in a little of the reserved water. Taste  for seasoning and add a pinch of salt and pepper to taste.

  3. Garnish with more cheese and parsley.

TIP: Feel free to add any leftover vegetables or protein to round out this dish.  Roasted vegetables, chicken, beef or lamb would be great to top this dish.
