Toast is the quintessential go to foundation for when cooking dinner is just too much. You can literally top it with just about anything and have a delicious meal. The key to the most delicious toast? Fry it in a pan with lots of butter. Treating your bread this way yields a buttery, crispy toast that you will dream about.

Serves 4

4 1” slices of bread

4 tbsp butter

5 tbsp goat’s cheese

1 shallot, thinly sliced

100g sliced smoked salmon

1 apple sliced thinly (any variety)

Salt and pepper to taste

  1. Melt 1 tbsp butter in a frying pan over medium heat. Add two slices of bread and fry until golden brown and crispy about 2min. Once the bread is golden brown on the one side add another 1 tbsp of butter to the pan and then turn the bread to toast on the other side for another 3min. Repeat with last two slices of bread.

  2. Smear each piece of toast with goat cheese, top with a few shallots,  2 slices of smoked salmon and top with a couple apple slices.

  3. Season with salt and pepper.

Tip: If you don’t have goat’s cheese feel free to use cream cheese, ricotta, boursin or even greek yogurt.
