How to make hummus naan with roasted vegetables and crispy tofu
- Preheat the oven to 400°F.
- Grate the tofu onto a plate lined with paper towels. Cover with more paper towels and press lightly to remove excess moisture. Set aside for 5 minutes to drain.
- In a bowl, toss the red pepper, zucchini, and red onion with a drizzle of olive oil. Season with salt and pepper. Spread onto a baking sheet and roast for 20–25 minutes, until tender and caramelized.
- Transfer the drained tofu to a bowl. Add paprika, garlic powder, and onion powder. Toss to coat evenly.
- Heat a large non-stick skillet over medium heat. Add vegetable oil, then the tofu in an even layer. Let it cook undisturbed for 4–5 minutes to develop crispy edges. Stir and continue cooking for another 6–8 minutes.
- Add the butter and stir to coat the tofu. Cook for another 3–4 minutes until browned and crispy.
- Warm the naan in the oven for a few minutes until soft and pliable.
- To serve, spread each naan with a generous spoonful of hummus. Top with roasted vegetables and crispy tofu. Drizzle with hot sauce and serve warm.

Tips for success
- Grating tofu creates more surface area for crisping—don’t skip the pressing step.
- A large skillet helps the tofu crisp more evenly by avoiding crowding.
- Roasting the veggies separately brings out their natural sweetness and prevents sogginess.

FAQ
Can I use a different protein?
Absolutely—grilled chicken, roasted chickpeas, or even scrambled eggs work well in place of tofu.
Is this good for meal prep?
Yes. Store the hummus, veggies, and tofu separately in the fridge. Reheat and assemble when ready to eat.
What other sauces could I use instead of hot sauce?
Try a tahini drizzle, garlic yogurt sauce, or chimichurri for a different twist.
Hummus and Roasted Vegetable Naan with Crispy Tofu
- Yield: Serves 4
Ingredients
- 1 block tofu
- 1 red pepper, diced
- 1 zucchini, diced
- 1/2 red onion, diced
- 2 teaspoon paprika
- 2 teaspoon garlic powder
- 2 teaspoon onion powder
- 1 tablespoon butter
- 1 container store bought hummus
- Sriracha sauce (or hot sauce of your choice)
- Vegetable oil
- Salt and Pepper
- 4 plain Naan or Pita
Instructions
Preheat oven to 400°F
1. Lay a couple pieces of paper towel on a plate. Grate the tofu onto the paper towel and top with more paper towels. Press down lightly to wick away as much moisture from the tofu as possible. Set aside for about 5 minutes
2. In the meantime, to a bowl, add the red pepper, zucchini and red onion along with a drizzle of olive oil and toss to combine. Season with salt and pepper. Add the vegetables to a baking sheet. Cook for 20-25 minutes or until the vegetables are cooked through and tender.
3. Add the shredded and drained tofu to a bowl. Season with the paprika, garlic powder and onion powder. Stir to combine.
4. Place a large non-stick skillet over medium heat and add a tablespoon or so of vegetable oil. Once the oil is hot add the shredded tofu. Let the tofu sit, undisturbed for 4-5 minutes while it cooks, to take on some crispy edges. Stir and continue cooking for another 6-8 minutes. Add the butter and stir through to encourage more browning. Cook for a final 3-4 minutes.
5. Warm the naan bread in the oven for a couple of minutes.
6. To serve, slather each naan with hummus, top with some shredded tofu, roasted vegetables. Garnish with sriracha.
Tip: For the tofu, the larger the pan the better. Spreading the tofu out in one even layer helps it to brown and crisp up more quickly.
