Dairy-free Tropical Coconut Overnight Oats

Serves 4

1 ½ cups large flake oats

2 tbsp chia seeds

400ml can coconut milk

¾ cup water

2 tbsp brown sugar

2 tsp lime juice

Optional mix in ingredients (choose 1)

  • 1 cup cubed pineapple (canned or fresh)
  • 1 cup cubed mango and 2 tbsp minced candied ginger

·  1 cup mashed banana and 1 tbsp cocoa powder


  1. Mix together all the ingredients and store in the fridge in an air-tight container overnight.


Serve in the morning garnished with more fresh fruit and brown sugar.
