Crispy baked pepper rings

I always have multi-coloured peppers in my crisper. My kids love to snack on them and they go with almost any meal. I roast them in the oven, grill them on the bbq and add them to salads. The shape of peppers make them a fun vegetable to work with. If you cut them in rings your can make them into these tasty, crispy baked pepper rings. Serve them as a side dish or whip up a batch to eat while you watch a movie or Saturday night hockey game.
INGREDIENTS
3 large peppers (any colour)
1 cup all purpose flour
½ tsp onion powder
½ tsp garlic powder
¼ tsp salt
2 eggs
2 cups seasoned panko bread crumbs
Preheat oven to 400F
COOKING INSTRUCTIONS

Slice the top of each pepper and gently remove the inner pith and seeds. Slice the pepper into rings that are ¼” thick.

Pour the flour, onion powder, garlic powder and salt into a large zip lock bag.

Add the eggs to a wide shallow dish and lightly whisk.

Pour the seasoned panko bread crumbs into another Ziploc bag.

Working in batches, place the cut peppers into the bag with the flour and shake to coat evenly. Dip the flour coated rings into the egg mixture to coat then transfer the peppers into the panko Ziploc bag and gently shake so each pepper is well coated. Place the panko coated peppers on to a baking sheet.

Cook for 18-20min. flipping the peppers half way through.

Serve with dipping sauce.
