Creamy Ranch and Bacon Party Potatoes
- Yield: Serves 4-6
Ingredients
680g (1 1/2 lbs) mini potatoes
2 teaspoons olive oil
2 tablespoons roughly chopped fresh dill
2 tablespoons sliced fresh chives
1/2 teaspoon freshly cracked pepper
1 cup sour cream
1 tablespoon + 1 teaspoon ranch seasoning
2 tablespoons lemon juice
1/4 cup crispy bacon bits
Instructions
1. Place the potatoes in a medium pot and cover with water. Season generously with salt. Bring to a boil and cook for 8-10 minutes or until the potatoes are just cooked through. Don’t overcook. Drain.
2. Place the potatoes in a bowl. Add the olive oil and half of the dill, chives and all the pepper. Toss to combine. Set aside in the fridge to cool. This can be done up to 48 hours in advance.
3. Add the sour cream, ranch seasoning and lemon juice to a bowl and mix to combine. Transfer the ranch dressing to a squeeze bottle (optional).
4. To serve. Slather a couple tablespoons of the ranch dressing on the bottom of a serving dish. Stack the potatoes on top in a pile. Drizzle generously with more ranch dressing. Garnish with the remaining dill, chives and bacon bits. Serve immediately.
Notes
Tip: Add some fancy toothpicks beside the potatoes to make it easier for people to pick them up.
Make ahead and store the potatoes separate from the Ranch dressing. Remove the potatoes from the fridge about 20 minutes before serving. Best served at room temperature.

Sounds delish!
Haven’t made it yet but wondering what could I use instead of dill? My husband doesn’t like it
Any soft herb will do! Parsley, or extra chives.
Love the potato idea. I’m thinking football game fare. Comfort food. Cold beer.
I’m only seeing 3 appetizer recipes, not 15
Each day a new recipe drops and it will be added to the page. So keep your link and check back in.
Thank you
This looks amazing. I’m
making it this weekend for a tailgate party! Will report back
Could I serve these hot(warmed up) as a side for a buffet table?
Absolutley!
Haven’t made them yet as wondering if this is served cold?
I’d serve them more at room temperature. Take them out of the fridge about 20 minutes before serving them.
This was the sleeper appetizer at the holiday party. It was easy and so delicious. I used small potatoes but I probably would have cut them in half because they were big bites. I’ll be making this again!
Made these for book club last night and they were delish!
Made these last year for our appie Christmas Party. They were a huge hit especially with the kids…lol…
