Ingredients you will need for this Creamy Celery and Potato Soup with Chorizo
This simple soup requires only five main ingredients:
- 1 cup diced Spanish chorizo
- 1 cooking onion, diced
- ½ head of celery (about 8 stalks), sliced
- 2 Yukon Gold potatoes, peeled and diced
- 3 cups chicken stock
- Salt and pepper to taste
How to make this Creamy Celery and Potato Soup with Chorizo
Follow these easy steps to create a comforting and flavorful soup:
- Cook the Chorizo: Place a pot over medium heat and add the diced chorizo. Cook until the chorizo releases its oil and becomes crispy, about 5-7 minutes. Remove the crispy chorizo and set it aside, leaving the colorful oil in the pot.
- Sauté the Vegetables: To the same pot, add the diced onion and sliced celery. Cook for 6-8 minutes, stirring occasionally, until the vegetables are soft and translucent.
- Add Potatoes and Stock: Stir in the diced potatoes and pour in the chicken stock. Bring the mixture to a simmer, then cover and cook for about 15 minutes, or until the vegetables are tender.
- Puree the Soup: Remove the pot from heat and use a hand blender (or regular blender) to puree the soup until it reaches your desired consistency. For a creamier soup, blend until smooth; for a heartier texture, leave it slightly chunky.
- Finish and Serve: Taste the soup and add salt and pepper as needed. Stir in three-quarters of the crispy chorizo. Ladle the soup into bowls and garnish with the remaining chorizo for an added crunch.

- Blend to your liking: Whether you prefer a smooth, silky soup or a chunkier texture, adjust the blending to suit your taste.

The one I recommend for this recipe is the spanish variety. It is salami-like and chock-full of all kinds of flavors like garlic and paprika. Often you can find it in both hot and mild – so choose your own adventure. If you can’t find chorizo at all, feel free to substitute cooked off bacon that has been crumbled into bits. I love this soup pureed and you can use either a hand blender or a countertop blender. Puree it as smooth or chunky as you like.
