Cinnamon-Sugar Apple Cake

INGREDIENTS
1 ¼ cup brown sugar
1/3 cup canola oil
1 egg
1 cup buttermilk
1 tsp vanilla
2 ½ cup flour
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground allspice
1 tsp baking soda
2 cups peeled, chopped apples (About 2 apples)
Topping
1 tbsp melted butter
¼ cup granulated sugar
2 tsp cinnamon
INSTRUCTIONS
Preheat oven to 325F
Line a 9×13 baking pan with parchment
- Whisk together the brown sugar, canola oil, egg, buttermilk and vanilla. Add the flour, cinnamon, ginger, allspice and stir to combine. Fold in the apples.
- Combine the melted butter, granulated sugar and cinnamon so it looks like wet sand.
- Sprinkle the topping over the cake batter evenly and bake on the middle rack for 40min or until a toothpick inserted into the centre comes out clean.
