GIFTS FROM THE KITCHEN: Cinnamon and spice kettle corn

Popcorn might not seem like the obvious choice for adults to snack on but I assure you it’s a crowd pleaser. The sweetness of both the sugar and cinnamon plays perfectly with the savoury flavours of salt and heat of cayenne. Make it for your next get together or gift it by the bag to some of your favourite people.
INGREDIENTS
Makes 10 cups
1 ½ tsp ground cinnamon
1 tsp salt
½ tsp cayenne pepper
4 tbsp canola oil
½ cup popcorn kernels
3 tbsp granulated sugar
COOKING INSTRUCTIONS

Mix the cinnamon, salt and cayenne pepper together in a small bowl.

Place a heavy bottom large pot over medium heat and add the canola oil and 4 popcorn kernels. Cover and wait until you hear the kernels pop.

Remove the lid and add the remainder of the kernels, stir to coat the kernels in oil and sprinkle over the sugar. Cover and cook, shaking the pan occasionally until the popping slows down. Turn off the heat.

Remove the lid and sprinkle the cinnamon mixture evenly over the popcorn. Replace the lid and shake the pot so the cinnamon mixture coats the popcorn.

Pour the popcorn out on to two baking sheets to cool.
