Outdoor living has a way of bringing on a healthy appetite. In fact, some of the most satisfying meals I’ve eaten have been enjoyed after a long day spent in nature and on the water. These meals are never fancy but somehow they become etched in your mind as “the best thing” ever! With a handful of simple ingredients, this skillet gnocchi is a go to meal that comes together in no time.
1 350-g package of skillet gnocchi
1 255 gram tub of cherry tomatoes
1 tablespoon olive oil
3 cloves garlic, peeled and left whole
pepper and salt to taste
optional: A handful of fresh herbs – basil or parsley or a heaping tablespoon of pesto!

Place your campfire skillet over a grate place over the campfire and add your oil.

Pour your skillet gnocchi in the pan and begin to cook until just starting to brown, about 5-8 min (watch the heat here, and move the skillet away from the flames if the gnocchi start to brown to quickly)

Add in the cherry tomatoes, garlic cloves and season with salt and pepper. Cook until the cherry tomatoes just begin to blister.

Throw in the herbs (pesto) and take the pan of the heat.

Serve immediately.
