Brown Butter & Marshmallow Cornflake Squares

6 cups (200g) cornflakes

¼ cup butter, divided

6 cups (300g) mini marshmallows

2 teaspoons vanilla extract

¾  cup chocolate chips, melted

½ cup salted roasted peanuts, chopped

Spray an 8x8- inch pan with cooking spray


1. Crush the cornflakes with your hands to break them up into smaller pieces. 

2. Place a heavy bottomed pot over medium heat. Add a tablespoon of the butter. Once the butter has melted add the cornflakes.  Toast them in the pot, stirring occasionally until they begin to turn a darker shade of golden brown. Transfer the toasted corn flakes to a bowl. 

3. In the same pot, add the remaining butter.  Melt it and cook it until it starts to froth and then turn golden brown.  Watch it carefully so it doesn’t burn.  As soon as you see the butter change colour, add the marshmallows.  Cook the marshmallows, stirring often, until they have dissolved into the butter.  Stir in the vanilla. Add the cornflakes and stir to combine. 

4. Transfer the mixture to the 8×8-inch pan.  Press the mixture into all sides and corners of the pan. 

5. Pour over the melted chocolate and spread evenly over the top. Scatter the peanuts over the top.  Set aside to cool completely (about 2 hours)

Cut into squares and serve
