Broccoli and Cheddar Tots

Ingredients

3 cups cooked broccoli, finely chopped

2 large eggs

1 cup grated cheddar cheese

1/2 cup bread crumbs

1/2 tsp onion powder

1/2 tsp garlic powder

Salt and pepper (to taste)

Instructions

  1. Preheat oven to 400°F (200°C) and spray a mini muffin tin with non-stick spray.
  2. To a mixing bowl, add ingredients and mix until well combined.
  3. Fill mini muffin tins with about 2 tablespoons of broccoli mixture. Alternatively, shape into tot-like bites and place on a parchment-lined baking sheet.
  4. Bake for 16-18 minutes, until tots are golden brown.
  5. Allow to cool slightly before serving.
