Breakfast on the BBQ

Breakfast on the BBQ

Morning coffee, slippers, a magazine and…barbecued brekkie? Oh yes! The smoky, char-y flavour of grilled food tastes great first thing in the morning. And there’s more than just bacon that can hit the grill at sunrise (although that alone is really, really good). Here are a few ideas I thought you’d enjoy:

  1. Grilled avocado halves

Slice and seed avocados, sprinkle with lemon juice if you have it, plus some oil, salt and pepper. Grill sliced-side down for 2 minutes, then flip and grill another 2 minutes. Add into scrambled eggs, a bacon sandwich, or smear onto toast.

  1. All the bacon

Because regular bacon is nice and fatty it will cause flare-ups, so lay strips on a preheated cast-iron pan, or line a baking sheet with foil and grill until nice and crispy. Peameal or back bacon can be sliced thick or thin and grilled a few minutes per side. I recommend brushing any bacon with maple syrup in the last few minutes of grilling.

  1. Old doughnuts

Slice doughnuts in half crosswise and lay halves on the grill just until toasted and warmed through. You can enjoy as-is or turn these into a sandwich (see bacon, above). The grill is a great place to reheat old croissants, too.

  1. Egg scramble

A scramble or even one of those overnight breakfast casseroles cook up nicely on the grill. Use a cast-iron skillet or a foil pan (double-lined for sturdiness, if needed). Add in eggs, cheese, thawed hash browns, bacon, green onions—whatever you’ve got—cover and grill 20 to 30 minutes on medium-high.

5.

Grapefruit halves

Remember the ‘80s when everyone had cold grapefruit for breakfast? This is a much better way: sprinkle halves with sugar and grill cut-side-down a few minutes until browned, then serve.

You can also grill breakfast quesadillas, leftover pizza, polenta, shakshuka, and more!
