Everyone loves a little bubbly. It makes the everyday special. The great thing is, you don’t have to wait for a special occasion to enjoy it. While it’s delicious all on its own, it’s also fun to create a cocktail using my favourite prosecco — La Marca. Adding a sweet berry simple syrup and the herbaceous rosemary elevates the fresh clean flavours of this premium Prosecco from Italy.
You will need:
Berry simple syrup
Fresh rosemary
Fresh raspberries
Prosecco
Berry simple syrup
1 1/2 cups Black Label simple syrup
1 cup mixed frozen berries
1 spring of rosemary

Pour the simple syrup over the berries and rosemary and mash. Place in the fridge overnight (or on the counter for a minimum of 1hr)

Strain the syrup through a fine mesh sieve and discard the berries. Store syrup in a squeeze bottle.
To assemble the cocktail:

Strip the bottom of a rosemary sprig, leaving the needles on top intact. Thread on 3 raspberries and add it into the glass.

Pour 1 ounce of simple syrup into the bottom of a glass and slowly top with La Marca prosecco.
