A beer shandy is the quintessential summer cocktail for me.  In fact, it was probably one of the first cocktails I enjoyed with my mom on a hot summer’s day at the lake.   The thirst quenching combination of beer and ginger ale was always the perfect thing to drink after a day spent enjoying any outdoor summer activity.  This recipe I am sharing packs a powerful flavour punch with the addition of ginger beer and the caramel hit of dark rum.  My famous jerk chicken wings are the perfect snack to accompany this amazing beer cocktail.

Ginger Beer Shandy

1 oz dark rum

1 tsp fresh lime juice

3 oz ginger beer

5 oz red stripe

Garnish: wedge of lime

  1. Fill a beer stein 1/3 full of ice.  Pour in rum, lime juice, ginger beer then slowly stream in the red stripe.

  2. Stir gently with a long spoon.
