This is one of my favourite ways (short of banana bread) to use up an over-ripe banana.  Added to velvety oats spiked with cinnamon and topped with nuts its the perfect way to start any winter morning.

Serves 2

3/4 cup large flake oats

1 cup water

3/4 cup milk

1/2 tsp ground cinnamon

pinch of salt

1 ripe (or over ripe) banana

1 tbsp maple syrup (or honey)

Optional topping: chopped walnuts/fresh or frozen fruit/flaxseed

  1. Pour the oats, water, milk, cinnamon and salt into a medium pot and bring to a simmer. Cook, stirring occasionally for 6-8min or until the oats have absorbed much of the liquid.

  2. Add the banana and maple syrup to a bowl and mash with a fork.

  3. Stir the banana mixture into the oats and cook for another 2-3min.

  4. Divide the oats into two bowls and scatter over your toppings of choice.
