It’s 3:30 in the afternoon. Lunch is a distant memory, dinner is somewhere on the other side of homework, emails and one more load of laundry, and you are standing in front of the open fridge eating cheddar off the block. Been there. That’s exactly why this Bacon Ranch Chicken Salad lives in my fridge: a big, creamy bowl of rotisserie chicken, crispy bacon, cheddar and fresh dill that’s ready to scoop the second the hunger hits.

This is one of my Hunger Gap recipes, the snacks I keep on hand for those frantic in-between moments when you’re running on empty and the next real meal is miles away. Greek yogurt does most of the creamy work here (with a little mayo, because life is short), so you get a satisfying, protein-packed snack that actually keeps you full until dinner. Pile it on crackers, tuck it into a wrap, or eat it straight out of the container with a fork. I won’t tell.

Why You’ll Love This Bacon Ranch Chicken Salad

  • It starts with a rotisserie chicken. Somebody else already did the roasting. You pull the meat off the bone and you’re more than halfway there.
  • All the ranch, no packet. Garlic powder, onion powder, green onion and a generous handful of fresh dill give you that classic ranch flavour, and the Greek yogurt brings the tang.
  • Bacon and cheddar in every bite. A snack should feel like a treat, and this one absolutely does.
  • It bridges the gap. Chicken and Greek yogurt bring the protein that carries you through the mid-afternoon slump, so you’re not face-first in a bag of chips by 4 o’clock (unless the chips are for scooping, which is highly encouraged).
  • One bowl, days of snacks. Make it on Sunday and it’s waiting for you in the fridge all week long.

Ingredients

  • 1 Rotisserie Chicken
  • ½ cup plain greek yogurt
  • ¼ cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2-3 Green onions
  • ¼ cup finely chopped dill
  • 5 slices cooked crispy bacon, crumbled
  • ½ cup grated cheddar cheese
  • Salt and Pepper to taste

Tips for the Best Bacon Ranch Chicken Salad

  • Pull the chicken while it’s warm. The meat slides off the bone so much more easily when the chicken is still a little warm, so tackle this job as soon as you get home from the grocery store.
  • Keep an eye on the mixer. Fifteen to twenty seconds is all it takes to break the chicken apart. Stop early for a chunky chicken salad, or let it go a little longer if you like it smooth and spreadable.
  • No stand mixer? No problem. Two forks (or clean hands) will shred the chicken just fine. It takes a few extra minutes and a little elbow grease, that’s all.
  • Get the bacon properly crispy. Floppy bacon turns soft once it meets the dressing. Crispy bacon, crumbled small, stays crunchy and finds its way into every scoop.
  • Taste before you salt. Bacon and cheddar both bring plenty of salt to the party, so give it a taste first, then season with salt and pepper.

How to Make Bacon Ranch Chicken Salad

  1. Remove the skin from the chicken and discard. Remove the meat from the bone.
  2. Place the meat in a stand mixer fitted with the paddle attachment and mix on medium-low for 15-20 seconds to break the chicken apart. The longer you mix the smoother the chicken salad will be.
  3. Add the Greek yogurt, mayonnaise, garlic powder, onion powder, green onions, dill, bacon, cheddar cheese, and salt and pepper, and stir them in. Season with salt and pepper to taste.

Storage and serving: Store in the refrigerator for up to 5 days. Serve in a bowl, on salad, on chips, or crackers.

Frequently Asked Questions

Can I make chicken salad without a stand mixer? Yes. The stand mixer is a great shortcut for shredding the chicken quickly, but two forks or clean hands work just as well. You can also chop the chicken finely with a knife if you like a more uniform texture.

How long does chicken salad last in the fridge? Store it in an airtight container in the refrigerator for up to 5 days. Keep it cold and don’t leave it sitting out on the counter for more than a couple of hours.

Can I use leftover chicken instead of a rotisserie chicken? Absolutely. Leftover roast chicken, poached chicken breasts or grilled chicken all work. Aim for roughly the amount of meat you’d get from one rotisserie chicken.

What do you serve with chicken salad? Anything that can scoop! Crackers, tortilla chips, cucumber rounds and celery sticks are all great. It’s also lovely piled on a green salad, stuffed into a wrap or pita, or tucked into lettuce cups.

Can I use all mayonnaise instead of Greek yogurt? You can. The Greek yogurt brings tang and extra protein, but if an all-mayo chicken salad is your happy place, go for it. It will be a little richer and a little less tangy.

Can you freeze chicken salad? I don’t recommend it. Dressings made with yogurt and mayonnaise tend to separate and turn watery once thawed. This one is best made fresh and enjoyed within the week.

Does Bacon Ranch Chicken Salad use ranch dressing? Nope, no bottle or packet required. The ranch flavour comes from garlic powder, onion powder, green onions and fresh dill, all tied together with tangy Greek yogurt and a little mayonnaise.
